If you're going the PC route with a card that can do 24/96, I'd suggest recording at the higher sample rate. I won't claim I can hear the difference because I've never bothered to A/B, but chances are it helps.. I know many engineers who prefer to do their digital recording and editing in a higher sample rate and it sure makes sense to me..I record to Wavelab and dither down to redbook.. any good mastering software can do this.
Of course this requires more processing power so don't try it in your circa '96 Pentium 2.. also, when recording with PC it's best to optimize the OS, lots of good tweaking tips out there.. nothing crazy, you can start by disabling anything that might take up processing power during the recording - don't start checking your email or photoshopping Bush's head onto a chimp.
If you can afford it, choose an external style soundcard so you can isolate the converters from vibration, noisy power, etc. (Would you put an audiophile quality DAC anywhere near such a horrifically noisy and vibrating environment? Why treat your A/D like that?)
