It is about clarity, depth, lack of distortion, and lack of tape hiss. Nothing really to do with locomotive recordings or out of phase stereo trickery of the time.
You are correct in the multi-channel live Pink Floyd experience of the era. They basically invented quadraphonic sound with their shows and it was revolutionary. However the LP is of a studio recording and is a dedicated mono mix. Anyone who is a fan of SOS should pick it up. As stated I have enjoyed SOS since the late 70's in stereo and this was a real eye (ear?) opener for me.
