RE: How long to air dry after vacuuming with VPI?

Humid does NOT mean wet. It just means that the disc surface has a relative humidity level equal to or greater than that of the surrounding air.

Several record playing regimes of the past used to deliberately encourage humidity to reduce static. For example the classic Watts Preener. This used a damp (not wet but damp) wick inside a plush pad so that it both removed dust from the surface of the disc and left the disc in the best condition for replay everything else being equal. I used this device for a long time until the company went out of business due, I believe, to the death of the owner. My discs from that time (from the mid 1960s on) still play superbly.

Avoiding humidity will encourage static which is then a problem in its own right. I can remember reading posts here in the past from inmates living in dry areas ( e.g. Arizona) with major issues arising from this.

As I said, vacuuming should remove the water and further air drying should not be necessary. However if you want to air dry thereon then that is your privilege but as there is no need there is no optimum time for it.
