Virtually all new music is recorded and mixed digitally. The exceptions will have banners on the packing proclaiming their analogueness.I can highly recommend Gillian Welch and David Rawlings, "The Harrow and the Harvest" from a few years ago, and Ferit Odman's, "Dameronia With Strings." Also there are some nice, classical direct-to-disc recordings as of late, which, of course, have not been subjected to either digital or analogue storage, short of the cutting lathe itself.There are others, but it is a niche market within a niche market.
