Simply the idea of correct impedance loading is to flatten the frequency response by reducing a rise in the high frequency response that occurs with most ( all?) MC cartridges.
Can you hear it? It depends upon the cartridge, your system, the music you play and your preferences.
I will generalise. Like John Elison in this thread I have never heard an MC cartridge sound great "open" (in practice that's into a 47Kohm input more suited to an MM cart).
You may think that as we are taming a high frequency resonance then all of the action is going to happen up there. Not so in practice as correct (or reasonable) loading seems to subjectively affect the overall sound of the cartridge. To me ( others may or may not share my view) cartridges that are not loaded properly often sound lacking in substance i.e. there is no fullness or body to the sound.
I guess that I do however go along with the opinion that the lower the internal impedance of the cartridge the less subjectively audible effect there is from some degree of mismatching. On the whole as I tend to use MC cartridges with internal impedances of <10ohms an input impedance of 100 ohms on my phono amp (a pretty standard available setting on MC preamps) has proved suitable.
