It's simple. Just wind less turns on the MM coils. That's why MCs have low output and it's done to keep moving mass down on MCs where the coils move unlike for MMs. So you can get higher output on an MM without adding mass.
The reason to wind less coils on any pickup including MM is to reduce inductance and increase top end band width.
