The platter needs to be level, the arm needs to be where it needs to be to get the optimum VTA.
I'm using an arm with VTA on-the-fly adjust nowadays- it makes an audible difference in dialing in a cartridge. It might be imagination but perhaps different records respond slightly to varying VTA slightly??
Maybe adjusting the VTA by ear is a dodgy approach and there's super-high-tech ways to measure rake angle, look at it with a microscope, etc etc but I'm going by ear for now. I don't intend to tweek every record every spin- I just want to listen to music...
But the best compromise VTA I come up with is clearly independent of the level of the platter.
