"Real" as in your first example, but only because I've never heard a recording of a junior high school band playing out of tune cheap instruments in the Gym. I have a feeling that both recordings would sound reasonably real on my stereo system.
I've attended symphony orchestras on several occasions with the express purpose of determining just how real my system sounded. I was impressed with the sound of my home stereo system until the orchestra played a very loud passage. There is no way my home stereo system could duplicate the smoothness and composure of a full orchestra playing very, very loud. On the other hand, for about 90% of the music, I believe my home stereo system sounded very similar to the real orchestra.
At any rate, I think my system sounds good, but not all recordings sound good. Furthermore, I don't want my system to make bad recordings sound good, if that's even possible. I want an accurate system. Accuracy and realism are my primary goals. As far as I'm concerned, "sounding good" is the responsibility of the recording and mastering engineers.
