I started out with a Tascam US 322 capable of 24/96 and VinylStudio. Both allow attenuation of signal. The $30 VinylStudio software can split tracks, edit pops and clicks, add metadata using discogs and other databases, save to various file formats including mp3, burn cds and much more.

It is time consuming but also enjoyable. I've upgraded to the Tascam DA 3000 and iZotope RX but still use VinylStudio.
When my neighbor learned I could rip lps, she brought over her Beatles collection. She was living in Germany during the 60s when she bought most of them...Parlophone mono. It does occasionally allow me to hear music I would not otherwise hear.
Good luck with your mission
