I have a Tascam DA-3000. It records 16/44 through 24/192 PCM plus DSD. I record vinyl to 24/96 because that is the max my DAC can play back and I feel it more than adequately captures the sound of vinyl. The DA-3000 records to CF or SD cards. I use a 32gb CF card. Using a card reader, I then transfer the wav files to a hard drive for clean up.
I use iZotope RX3 for clean up and Vinyl Studio for adding track information and album art. Vinyl studio can create files for a music server or burn tracks to cd.
