I am listening to Josh Groban's Noel CD which I found really excellent artistically and sonically, pretty traditional but not too operatic.
For a Jewish Christian perspective from a good man, try Marty Goetz' album. Traditional Jewish and Hannukah blended with Christmas faves.
For other demo, try Robert Shaw on Telarc or John Williams/Boston Pops.
Robert Shaw 1990 CD (linked) has similar formal orchestral and choral material as my Cleveland Orchestra FM cassette tapes from the late 80's, which were really more spectacular and lively. I heard the Williams material also from 1990 while driving to another city this past weekend, and it was very good.
