How does Bi-Amping really work?

Sorry if this is trivial for most of you guys, but I can't seem to find a specific enough answer anywhere.
I understand that "bi-amping" means running the midrange/treble content of the signal through a dedicated amp/speaker combination, and the bass through another setup (right?).
But how do you split the signal? Let's be as specific as possible. I run my phono system through a rebuilt Eico HF-81 (EL84 outputs, 14 wpc) into a pair of Spendor BC-1 speakers. I love it. I want a bit more bottom end and "size", though. There's a pair of rebuilt Dynaco Mk.IIIs sitting around unused. How would I employ those? A single subwoofer? Two more bass speakers? Two more full range speakers? What brand/model speakers would be suitable? How do I run the Mk.IIIs off the Eico's preamp? What type of crossover do I need, and where does it go? You can tell I'm a bit lost, but you guys have taught me a lot already, hopefully you can help with this one.
