Higher voltage is fine, perhaps better for longevity. More capacitance will not yield much if any sonic improvement, but higher inrush current might stress other circuit elements. Physical size is critical, of course. Temp rating does not affect sound, but longevity. If the inside of the amp doesn't get very warm, an 85 might last 10 - 15 years versus 20 for a 105. Where you might achieve benefits is by using two caps of half uF/same voltage value in parallel. That requires extra space and a bit of additional wiring, but will not cost a lot more.

Those big Mundorf's are pricey, and I don't think you'll get much of a benefit from them. I've used various supply caps in my own amps, and I couldn't detect much difference. You'll see claims for them and other brands, but results are just as variable as with any other part swap.

My own preference would be to spend that money on better film caps if there are any in critical positions such as input/output coupling in the amps or elsewhere. I guarantee a copper foil/film cap would make a huge improvement over any metalized film.
