If you cut the sides of the Lack tops, the edges will now be exposed. They will show the innards of the tops which look like a mix of wood, paper and some other stuff. I would get some Wilsonart laminate and edge band the sides of the cut tops. Then again, considering the trouble, I would just stick to Ken's original recipes (lesson to be learned from the makers of "classic" Coke: if it ain't broke ...)
