1st, if you haven't already, see:

The corner panel;s are the icing on the cake, first you should really do the cake first, that being 1st reflection wall panels, and some sort of bass trap in the corners, even if it is only the Super Quick & Dirty version I cooked up.

Now, in response to your questions:

1. What are you guys using to keep the rolled fiberglass attached to the fiberglass panels?

If you follow the recipe exactly, there are two options:
A. Use cardboard for the "frame", and staple or glue the fiberglass to it.
Then wrap in polyester bating, and cover with burlap (or the cloth of your choice, such as speaker grille cloth, or Acoustone or Guilford of Maine).
Once the cloth has been wrapped and glued, stapled or otherwise sewn up, the fiberglass isn't going anywhere.

B. Using the semi-rigid fiberglass as the 'backing', pretty much the same thing, except that you can't staple to the 703/705, you have to use spray adhesive, or something like liquid nails or silicone rubber.
Obviously, all of these should only be applied with adequate ventilation, and left to cure/dry somewhere where you won't be breathing the fumes!

2. Have you come up with any nifty mounting techniques to keep them on the ceiling?

This is limited only by your imagination, and to a lesser extent, your wallet. I have sen everything from velcro, to shelf brackets, to simple nails or tacks, to wall hooks screwed into the ceiling and/or walls, and a wire loop (paperclip, plastic hook) on the side/s of the triangle, etc.

Since the original cardboard versions are pretty light, they can usually be held up with velco tape with adhesive backing, or the use of small nails or tacks into the ceiling and walls, using a long screwdriver to hide them behind the edges of the panel.
