Help testing 6H30PI tubes in ARC

I want to match new 6H30PI Sovtek tubes for my REF Anniversary 40 and REF 10 Phono preamps. As background, the circuit is a balanced design with 2 6H30s in each gain section, and 2 6H30s in each cathode follower section, of the R & L channels (8 tubes total). I have an Amplitrex AT-1000.

1) Could someone confirm the appropriate plate voltage for testing for these tubes? I think I should test at 180V, not 80V (There are 2 options on the tube tester).

2) When matching as a general rule, is Mu more critical for the gain section and Gm more critical for the cathode follower? Is it critical each tube's dual triode sections need to be matched or just the total Mu and Gm for each tube? I understand the channels and balance legs of the circuit need to match. What exactly needs matching.

3) How would you suggest I burn in these new tubes to stabilize them before testing? Could I just put the tubes in the equipment and leave it turned on for 3 or 4 days?
