The EH 6SN7's are pretty bad sounding, so that is for sure where to start - even basic Sylvania or RCA 6SN7GTB's will sound better, although lately I have seen Raytheon and Sylvania 6SN7WGT's selling remarkably cheap, and those are excellent (I especially like the Raytheons).
As for 12AX7's, my favorite are the Mullard CV4004, but those go for $200+/pair. Amperex Bugle Boy's are also really nice, but also tend to be pricey. Best cheap 12AX7 IMHO is the GE 5-star 5751 black plate.
