I am not an expert in this regard, so please take what I say with a grain of salt. I do, however, have 2 headphone amps that use 6AS7G's, and I have about 20 or so of these tubes.
RCA definitely seems to have made more of them than anyone else. The grey lettered ones are older, as you guessed; the red lettering "Radiotron" are newer. RCA also made them under contract to the US military, with the "JAN-CRC" designation. Less common are ones that were branded GE.
But Hytron and Raytheon also made 6AS7G's. I have one of each. Also, GEC in Britain and Ultron in (W) Germany made 6AS7G's.
There are also the variants, like the Tung-Sol 5998, which was also branded as the Western Electric 421a.
I love the sound of the 6AS7G in the headphone amps I have - wonderful tube.
