Newbie ? How does setting bias "hotter" or "cooler" affect sound of amp?

Only my second tube amp that lets me adjust bias but the first I can play w/ power tube choices. My old AES Superamp only ran 295 volts to plate and auto biaed the tubes. My new DJH version runs 495 volts to plate and lets me bias them. My old amp would bias my EL-34 Amprex Double D at 250 ma but Cary tells me to bias them on the superamp at 200ma? If I decide to bias them "hotter" at say 250 or so will it hurt the tubes or just shorten their life? What kind of sound can one expect bias running this bias setting "hotter" or "cooler" thatnks!

I know this is a general type question but b/c I have so many different power tube types here I would like tolearn a "general rule' on how adjusting the bias hotter or cooler effects sound of power tubes.
