pp-45,You may not damage anything more than the caps. But, I wouldn't recommend that substitution.
I try very hard not to drop the voltage rating of any cap, in a tube system. If your unit "sees" a constant 300-350 volts---those 200 volt caps will soon breakdown. What happens after that---could be as simple as lousy tone or as bad as damage to other stages.
FYI: I'd go to Jensen Oil Filled 0.1 mfd, 630 volt caps---if you are looking for tone and don't mind the extra expense. Or plain old 0.1 mfd, 600 volt Orange Drops. Higher voltage rating will give you a cap that last longer.
