These extra caps are probably to increase the stability because overall feedback is used, and there is too little stability margin in the design. Keep the transformers and bin the rest, there are good very cheap new EL84s out there (they are used in guitar amps and have low microphany). Find a schematic from the web, there are loads.JMO
