There are variations on the SET theme, but you right in part. Class A is part of the attraction. But it's also the character of the output device. True triodes have a quite different sonic signature than pentodes. A more effortless presentation ingenral with what most of us refer to as "palpable" sound.The simple circuit is also part of the magic, but every part in such a circuit is important, and none more so than the output transformer.
As for speakers, that depends on the triode. there is a post by Paul joppa in the FAQ that will help clarify this. If you go with the higher powered SETS (300B, 845) there are numerous conventional speakers that will work. The key is flat impedance and reasonable sensitivity.
IMO, going Deep Triode - 2A3, 45, 50, 10 and others - means horns or hybrid horns and biamping for best performance. Good commercial horns cost bucks. One can take the "tweak" route with something like LaScalas or Atec VOTs, or one can scratch build (designs all over the net). Lowthers are probably the most used, but other full range drivers (Fostex, Diatone, Fertin) have been discussed here and on the Bottlehead Forum. Some of these choice you may wish to augment with a powered sub, and that subject has also been covered somewhat.
