Decide how much power you need. If it's low power ( <10 watts)SET is probably the way to go, if moderate power (10-20 watts)is okay EL34, 807 or 6BQ5 in push-pull sounds great in triode mode, if you need higher power (30-80 watts) 807/EL34/6550/KT88 works well in push-pull triode, ulralinear, pentode in order of increasing power.
Once that decision is made, then driver and power supply considerations will enter the equation.
OTL's are the ultimate, but I'm not sure you want to tackle one as a first project.
You may want to buy back issues of The Audio Amateur and Glass Audio, perhaps also Sound Practices and Vacuum Tube Valley. Lots of projects there. Decide on how big of a project you want to tackle.
Use a big enclosure, build it simple and you can add embellishments (power supply regulators, oil power supply caps, gigantic coupling caps, etc.) later, if you so desire.
