RE: Cathode bypass...

It does increase the variability, so you need a bit more voltage headroom unless you can the bias periodically. The problem is even greater using current-source plate loads (which force a constant bias even if you use a resistor under the cathode). I rarely see +/-15% in plate voltage.

The place where it's a real problem is mostly with direct coupling. I've used trimmers and servo bias on occasion for those circuits.
