Cree SiC Diodes - Advice please

I'm a tube rectifier guy, but would like to take Eli's (and others') advice and use Cree SiC Schottky diode rectification in my next build. I'll be running capacitor-input filters, with a B+ not greater than 500V (and ~60mA). I need help:

Would 1,200V 5A diodes give me plenty of safety margin - I like to over-spec for reliability?
If using a CT HV transformer, would I need only one of the 3-pin types (see link) per supply?
What are the heatsinking recommendations?
Finally, what type of rectifier would get me close for rough modelling in PSUDII?

Any assistance much appreciated.
