It would be a neat project. I'm using Lundahl ITs for my EL84 PPP amp. If you don't plan to Triode strap the EL84s, you will need to tame the Pentode down with with some local feedback on the OPT. Global feedback will probably be dicey because of the ITs.

In your shoes, I would try the CF through the secondaries of the OPT and see what kind of results you get. Well designed IT coupling and local CF feedback could bring the linearity into a palatable range. The EL84 is a good candidate for Sakuma approach. A gain of 19 is a good voltage jump for an output valve. You will probably still need to add gain ahead of the amp to really get the magic out.

I have also gone down the rabbit hole trying to tame Pentodes. I like the sound of a well designed Pentode amp. The SET topologies are always there for us...
