Sorry I did not communicate better...I've built enough 845/GM70 amps to know that the original sim numbers were incorrect.The Cary manual indicates 987 v at the plate of the 845 and 114 v at the cathode, yielding 873 vpk. Using Ohm's law, we can calculate the current draw by dividing the voltage (114) by the value of the cathode resistor (1,125), giving us 101.3 mA. And, while those numbers don't EXACTLY match the curves, its close enough...
Re: the capacitors bypassing the IT: their function is almost certainly to smooth out freq response.
