Paul's suggestion will cover your PS transformer issue...very nice. The schematic is a little fancy for a neophyte builder but you can use that 400 to 400 transformer...

By raising the EL84 cathode voltage by 100V you solve the problem...the feedback loop certainly looks interesting.... If you had aspirations of triode strapping the EL84 (which does sound nice) you want to stick with the SET EL84 basic schematic...you will get about 2 watts....nice watts..

I'll post a nice schematic that I've always thought would be an interesting build...
