My advice is that you stay with a 5Y3 family tube. The forward drop in a 5Y3 is unusually large. You could overvoltage your signal tubes using either SS diodes or a different 5 V. vacuum rectifier.
While the exposure to cathode stripping is minimal at the anode voltages found in preamps, there is a way to slow the B+ rise down and increase your peace of mind. Use a 5Y3 family tube that has a cathode sleeve. Either the 6087/5Y3WGTB or the 6106 meet the requirements.
There is something to watch out for. If your preamp takes the "raw" B+ from a CT on the 5 V. filament winding, that connection should be moved to pin 8 on the rectifier's socket and the CT tied off. Using the CT connection is quietest for directly heated types. OTOH, you get the least noise from types that have cathode sleeves by connecting to the sleeve (pin 8).
