The quality of the O/P trafos DIRECTLY impacts on the end result. Miracles are not to be found in O/P "iron" at the price you mentioned. Check out what Plitron charges for their trafos. GOOD Asian "iron" is also costly. American winders like Electraprint and MagneQuest command serious money for their products too.
If you use the 8 W. schematic you get 8 W. You could tweak the operating point to squeeze a little more out, but (IMO) 8 W. into the speaker from a 300B is just about right. When you go for more, the EXPENSIVE tubes don't last.
