Unlike the Dynaco amps, the EICO amps, mono and stereo, are hard-wired---no printed circuit boards to get old and unreliable. The monoblocks in particular have lots of room underneath to hold all sorts of variations for future experiments. What I would do if I were you is to buy a pair of EICO monoblocks on Ebay such as the HF-22 or HF-35, first get them working correctly by repairing/restoring the original circuit, in other words replacing old capacitors, etc. Then after you're familiar with the amps, you can play around with different coupling caps, different resistors, different power supply caps, etc. Then when you're really ready for DIY, you can strip each amp, removing all of the components including transformers and tube sockets, throw everything away except the transformers and chassis, and then rebuild each amp with all new parts. This way you have a totally homebuilt amp, but you're working with a tried and true design on a chassis that is already punched with holes for all the tube sockets. And to top if off, the EICO output transformers are some of the best ever made. For more information on the EICO models, check out the following site:http://users.rcn.com/fiddler.interport/EICO.HTM
One last thing: try to buy kit built amps instead of factory wired units. The reason is that many of the factory wired amps use rivets instead of bolts and nuts to secure the tube sockets and terminal strips, and removing them is much more difficult than with a kit.
