when using a center tapped transformer. You would only need to consider a second one if current draw demanded it. While doubleing up would give you a lower impedance supply so would damper diodes or (heaven forbid) solid state diodes.A choke input filter does a lot more for you than just better ripple reduction. Really it is the way you want to go, regardless of the type and number of rectifiers you decide on. A LCLC is even better yet. I wouldn't use electrolytics either but instead film caps. Motor run caps work great for B+ filtering.
Read up on the difference between a full wave center tap supply, which is the standard type for tube rectifiers, and a full wave bridge, which is the standard for solid state rectifiers. The full wave bridge with one tube rectifier and two solid state diodes is a slick thing to consider.
