Given what you say I think you would be better served buying a used amp. I hear what you say about needing a fix. But by redesigning parts of the amps circuit you can get that. Dynaco's are hard to beat. Good output iron based around common tubes. Either the EL34 or 6550 will do given your desired wattage. The Dynaco amps are kinda perfect because they do need a redesigned front end circuit so that will provide your fix. You could either scratch build or buy an aftermarket one. Later on a new power transformer and choke input supply could be added along with a new chassis. You could experiment with levels of feedback as well as triode strapping of the output tubes. Point being that you can do anything from use ready built boards with instructions and loads of support to scratch building a new front end and power supply on a different chassis. And to top it off you won't have any problem selling things along the way, such as the stock driver board and power transformer.I wouldn't do the Mac thing unless you just want to restore and set it on a shelf. And I wouldn't do a ground up DIY thing unless you wanted something you couldn't easily buy used...something with CCS's, grid chokes, interstage transformers, non-standard tubes...etc.
You might wish to try a mix of parts and avoid using the same resistors and caps everywhere.
Also you will need a preamp. The foreplay would be a good one to consider and would help feed the fix. Lots of options for the foreplay to keep the fix going too:)
