Got a circuit? Got specs? Two things can give the symptoms you mention (this in my admittedly limited experience of pentode PP amps): too much feedback, and operating with high voltage/low current, i.e. Class AB but too close to Class B. They are not unrelated.
I ask these questions because a quick Google showed one mention that the Grommes is 12 watts, while most EL84 amps run 15 to 20 watts. Especially later designs would push the power and distortion envelope to get better specs, and the only way to get there is to go closer to Class B and add more negative feedback.
One other item, transformers designed for specsmanship sometimes have subjective treble problems while cheaper designs (with less interleaving) can actually sound better. Again, this is what I hear, YMMV and all that.
