You can't make up the power loss and stay in Class A.

The 6K transformer with the 60ma. 250v operating point will give slightly lower power with slightly lower distortion as compared with a 4.7K transformer at those same operating points.
There will probably be more sonic difference between the different transformers themselves(apart from impedance) than the sonic differences caused by the different plate load impedance. (250,60 into 6K vs. 250,60 into 4.7K)
Put it this way, a really good transformer that is not the right impedance will sound better than a poor transformer that is the right impedance.
I think it's time for you to build and hear for yourself. Try different operating points and see what works best for your transformers and speakers.
