Long booms, and Automated Dialog Replacememt, "ADR." There is nothing automatic about ADR - it's the process of bringing the actors into a recording studio to re-record dialog by lip-syncing to the video. Sometimes dialog recorded in the field is OK; other times not. When filming outdoors or on the street, all sorts of things can make noise that we would normally not notice, but are distracting to the film. Traffic, wind, even the shush-shush sounds of heavy winter clothes when walking. Pic is a typical setup for an ADR session.
When filming documentaries, mics are generally fine. But for a film with actors playing roles, we don't expect to see mics unless they are part of the story, such as a character performing in a club.
The other part of sound for film is foley, which are the sound-effects. Knocking on a door, footsteps on the sidewalk (or beach, or field, or stairs, or mud), car door closing, opening/closing a window, someone tumbling down a hill - these are all done by specialists in studios. A foley studio will have an astonishing variety of stuff to make noises that translate well to film. Foley artists are hugely creative and always amazing to watch. Do a web search on foley and look through the images - they're pretty amazing.
