I think there is a bit more too it than that. Certain types of distortion can lead to a euphonic (for some) sound and other types of distortion a harsh sound (for some). For other people, the same sounds would have different meanings, significance and descriptors.Total harmonic distortion, the distribution of harmonic distortions... and IMD: part of the picture, identifiable and describable at at gross level, but not the whole picture. No yet convinced that these measures can describe suitably what we hear. Further, with SETs distortion increases with power: a 300B running with an operating point capable of 8w will have much lower distortion when producing 1W than full power.
FWIW, what you are discussing here is broadly covered in some of the EML datasheets. Worth reading. Edit: datasheet linked below, ~1/3 from the top of the page.
I'm with you on DHTs. I suspect they sound more direct/"pure" (but not dry) than IDHTs, even when compared to those with similar curves and distortion levels.
An within reason, I'm with you regarding tube loading. I prefer a slightly high load. My SE 2A3 runs at circa 250V/40mA loaded with 4k2 (and solid inductance). Some load that at 2k5, most would probably aim for 3k5 to 3k9.
