Yes, that's exactly what I illustrated above. The 6J5 is half a 6SN7 so it would be practical to use a couple of 6SN7s for your stereo amp. You can use the 9 pin socket for a 6CG7 and pretty much use the circuit topology shown above. With a pentode or tetrode you need the feedback to lower the output impedance and it can be tricky. You would probably have to go with op tube to driver local feedback.
If you really want to get adventuresome you could use 6B4 or 6A5 triodes in your amp. You wouldn't have to worry about the feedback and they would plug right into your octal sockets. The sockets would need to be rewired of course and you would need two 6.3V filament transformers, one for each pair of triodes. But you really have to have some basic knowledge of electronics in order to set the amp up so the tubes were all biased properly and to troubleshoot the inevitable problems.
