Polarity will not matter for those caps. In general, any cap for which polarity DOES matter will be marked clearly with a (+) or a (-) as to polarity.

What Quest referred to is the fact that, since these caps are made from two layers of foil rolled into a cylinder, one of those foils will start on the outside and one will not. The outside should connect to the end with the lowest impedance to ground for a secondary (and not terribly dramatic as far as I know) shielding effect.

The end with lowest impedance to ground is probably the plate end, not the end to the 2nd tube's grid (unless the grid resistor is a very small value but that is not usually the case.)

You can try hooking the caps up both ways; the orientation that is quietest is correct. Make sure both channels observe the same orientation. If you get it wrong nothing dangerous will result.
