Update: Flat ceiling, now what is the best way to insulate the ceiling ??

OK, despite the architectural appeal of the arched ceiling, I ultimately decided to go with a flat ceiling, which will have a suspended valance going around the perimeter to provide downlighting with recessed pots, along with ambient down and uplighting with ropelight.

So, I now have a flat ceiling which will get covered with double sheetrock, attached to special sound isolation clips (instead of RC). We are putting fiberglass insulation bats into the wall joists (staggered wall studs) and covering that with double sheetrock also on isolation clips. Yet, the contractor/insulator is suggesting that we blow in insulation into the ceiling in the attic space below the arched ... they suggested that for temperature insulation and limiting sound transmission, it would be better to blow it in rather than trying to place fiberglass bats between the ceiling joists ... any advice on going with blown in insulation vs. fiberglass bats. Of note, this is a third floor room and we are trying to minimize sound transmission to the living space below ... so I want the best solution to help limit sound transmission outside the room. In addition to the staggered wall studs, double sheetrock, isolation clips etc. the room features a floating concrete floor, sitting on top of a subfloor of plywood on top of engineered floor joists, with blown in insulation between the floor joists.
