A matter of taste?

Surely you're right about that. I'll take mine raw.

However I think there's more. I may be full of it, but my theory is that as soon as you have more microphones than final channels that things can go to pot rather easily. At least to some extent if you sample at two points in space and have your speakers in somewhat similar angular positions then it arguable that you get a reproduction of sorts of the performance and venue.

Unfortunately I'm not knowledgeable enough about current recording process to hold forth with any veracity but my impression is that "minimalist" techniques sound more real than "maximalist" techniques, if there is such a thing. I don't know whether the problem is due to deficiencies in the electronics or the philosophy of the capture, but I suspect the latter. Now that media space is not much of an issue, I wish classical recordings would include both binaural and stereo versions, and maybe two versions of the latter. Being able to match the source to your room, mode and mood would likely bring the music home more effectively than using the bandwidth for higher resolution.
