Probably because ther isn't one that will fill all the holes. A cable isn't just wire, it is an RLC circuit that interacts with an amp and a speaker (other RLC circuits). Since no two amps and speakers are the same, you do have to listen. Using the same amps and speakers with different cables, differences can be measured which will account for what audiopiles call warmth or brightness. These differences show up as measured voltage deltas between amp and speaker at a particular frequency, and are what people hear when they say they can hear a cable.
