All very true but correct absolute phase while recording and using various mic techniques and in the playback of that recording was what I was talking about.

Most engineers will have a XY scope on the two buss throughout the intire process to check left/right relative phase and the microphone collection is known (marked) as to phase polarity. A quick look at the waveform of each track will show if the first half cycle if forward going or not. Most mikes in a pop or rock session are close and "in front" so forward is the direction that everyone's looking for.

If the funamental is out of phase on a particular track an engineer will hear that, hit the phase reversal button for that track and then check (look at the waveform) if not sure.

It is not "catch as catch can" in the studio. I know this, I've been there, done that.
