It's not about capturing the holy grail. It's about setting standards for excellence. Live music in an excellent acoustic space, played by excellent musicians on excellent instruments heard from an excellent seat sets the aesthetic bar for all else to be measured by. It is the best. It gives us a goal.
To answer your question, far too few. Hence the value in knowing what is the holy grail of sound. The more people, both industry people and consumers, that are aware of this lofty standard the more there will be a demand for it and supply of it.
