Not only does every instrument has its own character, but every guitar amp (even same model, same year of manufacture, with same tubes) tends to sound a tad different. I think much more so than "instruments" in the hi-fi world, in my experience.

I love the tone of wood based instruments after the wood has a chance to age. 50 year old acoustic guitars TEND to have a richer and sweeter tone than brand new ones.
