When you say that audio is about evaluating the "sound" and not the "music," I think you are making a fundamental mistake. The mistake is the assumption that all the information coming into our ears is equally available to consciousness whether we listen to the "sound as sound" or the "sound as music." I see no reason for this assumption.
In other words, you are assuming that any audible change to a system will show itself to consciousness whether I'm listening to things like degrees of sibilance, or listening to things like emotional tone of the singer.
