With respect to music vs sound I agree completely, it's the music that matters. But since the effect at hand limits our ability to assess sound quality by the extent of musical enjoyment repeatedly and rapidly, noticing changes in sound that correlate with the music being good or not provides a useful tool that's just one step removed. Then after you recover you can do a QC check based on pleasure.
Sibilance and strings seem to be where things fall apart first and so are often both good indicators and the very aspects which decrease enjoyment. "One note bass" is another, but at least that's usually confined to speakers and rooms.
Wine, women and song are all enjoyed, or not, as a gestalt. However if we feel the need to try and improve the experiences, then it's either trial and error or cranking up our left lobes to pick apart the experience and try to analyze and optimize it. The latter is the least fun, but sometimes it can pay off.
