What's the moral of this story: I think it is to let your own ears be the guide.

Depends what you're letting your ears be the guide to.

If you're letting your ears be the guide to what sounds better (or worse as the case may be) to you, then your ears are really the only thing that can guide you in that regard. I don't let anything other than my ears decide for me what I like or don't like.

If you're letting your ears guide you to determining some objective reality, such as whether or not something makes an actual audible difference, then our ears can be a rather poor guide, or perhaps more accurately, our brains.

So if you're not interested in determining some objective reality, then by all means, use your ears. Just that you seemed to indicate that what it was you were after was determining an objective reality. If that's not the case, then I misread you.
