I guess you missed the big 'WAV' button in EAC itself?
EAC rips to WAV files, then it (optionally) calls an external compressor, as specified in the Compression Options, to compress the files. To rip without compressing use either Action > Copy Selected Tracks > Uncompressed (F5) [this is the same as the WAV button], or Action > Test & Copy Selected Tracks > Uncompressed (F6).
