"A Symphonic Program Live in a Hall isn't Immersive"

Really? What about the reflections coming from the back, the sides, and the ceiling of the hall?

If these reflections are part of the original sound (and they are!), then the recording should capture them, and the playback should project them. (And I don't mean via earbuds, headphones, or a sound-bar, where the directionality will be confused.) Otherwise, the reflections of the recording location, which were there in the original performance, will be missing (or coming from the wrong direction!).

Your contention is kind of like those who say, "we only have two ears, so we don't need anything more than two speakers!". That does not account for the fact that our two ears allow us to discern where the sound is coming from: in front of us to be sure, but also to the side of us, in back of us, and above us.
